Nutritious and Delicious: Herb Crusted Chicken with Feta Sauce

We are going Greek with this week’s Nutritious and Delicious recipe! They say the Mediterranean diet is one of the healthiest in the world, so pop out the olive oil and get cooking!

Recipe:
2/3 cup whole wheat panko (Japanese bread crumbs)
2 tbsp Italian seasoning
4 skinless, boneless chicken breast halves
1/2 tsp. salt
1/4 tsp. black pepper
4 tsp. olive oil
6 tbsp. Feta Sauce -> See Below
Feta Sauce Recipe:
1 lemon
1 tbsp. fresh chopped mint
4 tsp. extra-virgin olive oil
Dash of black pepper
3.5 ounces of reduced-fat feta cheese
You can add cherry tomatoes for extra colour!
Stir together panko and seasoning in a shallow bowl. Sprinkle salt and pepper on chicken breasts, then dredge in panko mixture. Heat olive oil in a large pan over medium-high heat. Add chicken to heat and brown for 5 minutes. Turn chicken over and cook for another 5 minutes or until done. Remove from heat. Spoon 1 and 1/2 tablespoons of Feta Sauce over each chicken breast half. Serves 4.Serve with on top of orzo for extra nom-nom points.
For Feta Sauce:
Grind a 1/2 teaspoon of lemon rind and squeeze out 2 tablespoons of juice. Whisk together rind, juice, mint (finely chopped), oil, and pepper in a small bowl. Whisk together with cheese.
