Nutritious and Delicious: Tasty Tuna Quinoa Salad

Returning to school after a summer of healthy, home-cooked meals is tough! But have no fear, we have your answer for quick and easy dishes that may even rival your mom’s. The grain crop, quinoa, is as a healthy and delicious option for salads and sides. As well as being gluten free, Quinoa also offers a large amount of healthy fats and antioxidants and this salad is bursting with flavour and deliciousness.
Here’s a fantastic recipe for a healthy Quinoa Salad!

Ingredients:
1 cup of quinoa
3/4 of a cucumber
2 medium tomatoes
1 avocado
1/4 of an onion sliced thinly
1 can of tuna (optional)
1/2 lime
1/4 cup olive oil
pinch of paprika
salt to taste
pepper to taste
Directions:
Cook 1 cup of quinoa according to package directions and let cool. Slice cucumber, tomato and avocado into bite size pieces. Slice 1/4 of an onion as thin as possible to avoid large chunks of onion. Add all vegetables to cooled quinoa. Next, add a can of tuna, as a source of protein. Add paprika, salt and pepper to taste. Squeeze lime juice over the salad and pour olive oil over. Mix it all together!
Simple but delicious, this salad has a great balance of protein, vitamins and yumminess. My suggestion is to make a large amount to keep for lunch the next day, even quicker and just as tasty! Enjoy!
