Nutritious and Delicious: Healthy Cranberry Orange Loaf

Where can you find fibre, Vitamin C, Omega-3 and antioxidants all in one place? Right here in this festive cranberry orange loaf. Not only is it a great sweet treat with a cup of coffee but it is packed with fibre, from whole wheat flour and flaxseed. Ground flaxseed can be used in all sorts of baked goods, waffles and pancakes for added Omega-3 and dietary fibre. Aside from being super healthy, this loaf is very festive and a great holiday treat.

Ingredients
2 cups flour, preferably whole wheat
1/2 cup sugar
1 tsp baking powder
Rind of 1 large orange, grated
1/4 cup of ground flaxseed
3/4 cup of orange juice, with no sugar added
2 eggs, beaten
1/4 cup unsweetened apple sauce
1 1/2 cups cranberries, dried or fresh (chopped)
1/4 cup vegetable or canola oil
1/2 tsp salt
Optional: chopped walnuts, if you aren’t allergic like I am!
Optional: chocolate chips?
 
Procedure
First, start off by preheating the oven to 350 degrees. Line a 9″x5″ loaf pan with parchment paper or grease with butter or oil.
Mix together flour, baking powder, sugar, ground flaxseed and salt in a large mixing bowl. Then, in a separate bowl mix together eggs, orange juice and applesauce, oil. Next, add the grated orange rind to the mixture of dry ingredients. Stir in the liquid ingredients (egg, orange juice, oil, and applesauce) into the dry ingredients in the larger bowl. Next add the cranberries,  then the nuts or chocolate chips if you choose to include them.
Pour into the greased loaf pan and pop it into the oven. Bake for approximately 45 minutes. Make sure to let it cool completely.

Baking Tip: To test if your loaf or cake is ready, insert a toothpick into the centre. If it comes out clean (no batter stuck on it) then its ready to go!
