Tasty Hummus Wrap

Ingredients: (makes 1 serving)

  1. 1 flavoured wrap or tortilla
  2. 2 tbsp hummus
  3. 2 slices cucumber, sliced lengthwise
  4. 8-12 fresh spinach leaves
  5. 2 slices red bell pepper, sliced lengthwise
  6. ¼ avocado, sliced lengthwise
  7. 2-4 slices of oven roasted deli chicken
  8. ¼ cup shredded cheese

 

Method:

  1. Spread the hummus in the middle of the wrap (horizontally), leaving the edges without the spread
  2. On the hummus, layer the spinach leaves, cucumber, red bell pepper, avocado slices, deli chicken, and cheese
  3. Fold the wrap tightly by folding the short edges onto the vegetables, tucking them all in the first roll, then rolling firmly to the end
  4. Cut in half and enjoy!
