Thanksgiving Feast College Edition

Thanksgiving is traditionally a time to gather with friends and family, but heading home for the holidays isn’t always possible as a student. Don’t fret! This Thanksgiving we got you covered with a healthy and simple meal that will cover all your bases, and all you need is a sheet pan…

So skip the McDonalds and make an evening out of cooking up a Thanksgiving feast for you and a friend or two.

 

A One Pan Thanksgiving

Ingredients (2 servings):

Turkey

  • 1 lb boneless, skin-on or off turkey breast (alternatives include chicken or turkey leg)
  • 2 tbsp unsalted butter, room temperature
  • 2 cloves garlic, finely minced
  • 1 tbsp fresh or dried rosemary, finely chopped
  • Salt and pepper, to taste

 Stuffing

  • 2 cups store-bought croutons (or boxed stuffing)
  • 1 egg
  • ¼ tsp rosemary (or thyme, sage, preferred herbs)
  • ¼ cup parsley, finely chopped
  • ¼ tsp salt and pepper (or to taste)
  • ½ cup vegetable or chicken broth

Vegetables (choose desired)

  • Potatoes
  • Sweet potatoes
  • Butternut Squash
  • Brussel Sprouts,
  • Bacon (optional)
  • Olive oil
  • ¼ tsp rosemary (and/or thyme, sage, preferred herbs)
  • ½ tsp garlic powder (and/or cayenne pepper, paprika)
  • ¼ tsp salt and pepper (or to taste)

Gravy

  • Store-bought gravy mix
  • Water, follow package instructions

 

 Method:

  1. Preheat the oven to 375 degrees F
  2. Place a piece of foil on a large baking sheet tray

 Turkey

  1. In a small bowl, mix the butter, herbs, and salt and pepper
  2. Dry the outside of the turkey and underneath the turkey skin with paper towels
  3. Spread the compound butter underneath the turkey skin
  4. Place the seasoned turkey in the middle of a sheet pan

Stuffing

  1. In a medium bowl, whisk the egg and seasonings
  2. Add croutons, broth, and mix to combine
  3. Spread stuffing mixture onto tray or into 2 oven-proof ramekins

Vegetables

  1. Cut up (dice, chop, slice into rounds or halves, etc) vegetables of choice and spread on sheet pan
  2. Dice bacon and add to vegetables of choice (optional)
  3. Drizzle with olive oil, add desired seasonings and toss well
  4. Place on baking sheet

Gravy

  1. Follow package instructions

Baking

  1. Bake for 35-40 mins or until the vegetables and turkey are cooked
  2. Bon appetit!

 

Leftovers, if there are any, can be repurposed into a sandwich for lunch or a midnight snack. I encourage you to get creative with possible additions to your Thanksgiving sheet pan and explore what other easy sheet pan meals are out there!
